I hope everyone had a great Thanksgiving a couple of weeks ago.
We had dinner with my mom’s mom’s side of the family. It was a traditional Thanksgiving dinner with turkey, ham, dressing, and all the trimmings. I thought I’d share the recipe for the dish I took. Doesn’t macaroni & cheese scream Thanksgiving?!?!
Rich ‘N Cheesy Macaroni
- 2 1/2 cups uncooked elbow macaroni
- 6 tbsp butter, divided
- 1/4 cup flour
- 1 tsp salt
- 1 tsp sugar
- 2 cups milk
- 8 oz American cheese, cubed
- 1 1/3 cups small curd cottage cheese
- 2/3 cup sour cream
- 2 cups (8 oz) shredded sharp cheddar cheese
- 1 1/2 cups soft bread crumbs
Cook macaroni according to package directions, drain. Place in greased 2 1/2 qt baking dish. In a sauce pan, melt 4 tbsp butter. Stir in flour, salt, & sugar until smooth. Gradually stir in milk. Bring to a boil; cook & stir for 2 minutes or until thickened. Reduce heat. Stir in American cheese until melted. Stir in cottage cheese & sour cream. Pour over macaroni. Sprinkle with cheddar cheese. Melt remaining butter & toss with bread crumbs, sprinkle over top. Bake, uncovered, at 350 degrees for 30 minutes or until golden brown.
Yield: 6-8 servings
